Christmas Cakes by the London Review Cake Shop

Christmas time in the LRB Cake Shop means another exciting twist on the classic Christmas Cake recipe, made with love and hand-decorated instore by Cake Shop manager Terry Glover.

This year’s is a festive whiskey, walnut and kumquat cake and a homage to Terry’s mum, who used to bake it as a staple. Based in South London now and living alongside women from Jamaica and Trinidad, Terry has expanded on her mum’s original English/Irish flavours to incorporate influences from the West Indian Islands, soaking the fruits in rum, tea and sherry spices all year round to produce a deep, boozy flavour.

This miniature fruit cake is decorated with hand-crafted sugar paste decorations and a generous layer of marzipan. The strong citrus hit of the kumquats, one of Terry’s favourite fruits, is her nod to the Christmas clementine. The walnut adds a bit of that recognisable Christmassy flavour, deeply roasted to the point of almost burnt.

The inspiration for this fruit cake runs deep, from the visual influences of textile designer William Morris to tastes from Terry's own childhood kitchen, and its delicate balance of flavours makes it the perfect addition to any Christmas feast – or, if you can’t possibly wait that long, the perfect accompaniment to your afternoon cup of tea!

Each cake costs £20 and will be available for collection at the London Review Cake Shop at 14 Bury Place.
