The days start to shorten, there’s a nip in the air, but the light is still warm – and the ingredients that ripen at this time of year seem to be trying to take in as much of that warm light as they can possibly hold. Think of the way that elderberries shrivel, sun-drying themselves right on the tree; the innate abundance of a pumpkin or a gourd; the mellow, complex sweetness of chestnuts. The recipes take these tail-end of summer treasures and apply Terry’s tried and true techniques for bringing their feels and flavours into the starker months ahead.
